Ingredients
- Four large potatoes
- Six slices of chopped bacon
- One medium diced onion
- 4 cups chicken broth
- 1 cup heavy cream
- 1 ½ cups shredded cheddar cheese
- ¼ cup chopped chives
- 1 tbsp Salt
- 1 tbsp black pepper

Making Process
- Warm a cast-iron skillet on medium heat and place the chopped bacon inside. Cook until it turns golden and crispy.
- Transfer the bacon to a plate. Add sliced onions to the remaining bacon fat and sauté until they appear soft and transparent.
- Take a large pot and add four sliced potatoes along with chicken broth.
- Let the mixture simmer gently over medium heat.
- Return the bacon to the pot, and then add heavy cream, shredded cheddar, chives, and the sautéed onions.
- Stir everything together until the cheese has fully melted.
- Pour into cups or bowls and serve piping hot.
